Basic Raspberry Pie

4 cups fresh raspberries
1 cup sugar
5 Tablespoons flour
1/2 teaspoon cinnamon (optional)
2 Tablespoons butter
9" Double pastry shell

Preheat oven to 375. Stir together all ingredients until mixed well. Pour into a 9" pie shell. Dab with butter. Add top pie shell. Bake 45 minutes to one hour. Optional: For a shiny, sugary crust- brush top crust with milk or water and sprinkle with sugar prior to baking. For a glazed crust- brush with whole egg or egg yolk prior to baking.

Mandarin Chicken Salad with Raspberry Dressing

Dressing:
1/2 cup raspberry vinegar
1/2 cup honey
1/4 cup soy sauce
2 teaspoons Dijon mustard
1 teaspoon sesame oil
Salad:
1 head Boston lettuce, torn into pieces
6 cups romaine lettuce, torn into pieces
1 cup jicama, cut into julienne strips
3/4 lb cooked chicken breast, cut into strips
1 11-ounce can mandarin oranges, drained
1/3 cup roasted, salted, sunflower seeds
1 cup fresh raspberries

To Prepare Dressing: In screw top jar, combine all ingredients. Shake well and set aside.

To Prepare Salad: In large bowl, toss together Boston lettuce, romaine, jicama, chicken, oranges, and sunflower seeds. Divide among salad plates. Top with dressing. Sprinkle with raspberries. Serves 6-8.

Wisconsin Aloha Jam

5 cups crushed raspberries (if frozen, thaw)
2 large 20-ounce cans Dole crushed pineapple in own juice
1 Tablespoon Real Lime juice
2 packages ‘Sure Jell’ pectin
1 teaspoon butter
10 cups sugar, measured and set aside

Stir Sure Jell into fruit and juice. Add butter. Bring to full boil in a large pan until it cannot be stirred down. Add sugar all at once. Continue to stir and bring to another full boil. Boil for one additional minute or until it coats a spoon. Ladle into sterile jars and hot water bath for 10 minutes. Makes approximately 15 cups.

Raspberry Fizz Salad

1 6-ounce box cranberry-raspberry gelatin
1 1/2 cups applesauce
1 cup 7-Up
1/2 cup orange juice
12-ounce bag frozen raspberries
1/4 cup chopped pecans

In medium saucepan, stir gelatin in applesauce and bring to a boil, stirring constantly to dissolve gelatin. Remove from heat; add 7-Up and orange juice; stir in raspberries. Chill until partially set. Stir in nuts. Pour into lightly oiled 5-cup mold or 8-inch square pan and chill until firm. Unmold on serving plate or cut into squares. Garnish if desired with greens and fresh raspberries. Serve plain or with sour cream dressing. Makes 9 servings.

Sour Cream Dressing:

1 cup sour cream

Add honey to sweeten (1 1/2 to 2 teaspoons)

Chill until ready to serve.
