Strawberry Bread

  • 1½ cups flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1½ teaspoon cinnamon

  • 1 cup sugar

  • 2 eggs

  • ½ cup shopped nuts

  • ½ cup + 2 Tablespoons cooking oil

  • 16 oz. Frozen strawberries, thawed (NOT drained)

Mix dry ingredients in bowl. Mix remaining ingredients and add to dry mixture. Stir carefully to mix together. Pour into greased loaf pans: one 9-inch or two pans if smaller. Bake 350 degrees for approximately one hour. Cool in pan 10 minutes then turn out.


 

Magnificent Muffins

  • 1 1/2 cups all-purpose flour

  • 3/4 cup sugar

  • 2 teaspoons baking powder

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 2/3 cup plain nonfat or lowfat yogurt

  • 2/3 cup skim milk

  • 1/2 cup strawberries (or any berries)

Preheat oven to 400 degrees. Grease muffin cups or line with paper baking cups. In large bowl, combine flour, sugar, baking powder, baking soda, and salt. Gently add yogurt, milk and blueberries; stir until dry ingredients are moistened. Fill prepared muffin cups 2/3 full. Bake 18 minutes or until lightly brown and toothpick inserted in center comes out clean. Serve warm. Yields 12 muffins.
